Ingredient notes

Aquafaba

This is just the chickpea liquid from a can. It's my favorite egg alternative, and when softly beaten, it creates a light, supple, and fluffy texture in baked items like Vegan Lemon Cake and these muffins.

Bananas

When the bananas you neglected to eat start to go brown and spotty, this is the ideal recipe to use.The muffins will be sweeter and more delicious if your bananas are ripe. Additionally, the ripe bananas provide as a natural sweetness and source of moisture.

Vegan buttermilk

Just combine oat milk and lemon juice to create a buttermilk substitute. This recipe is revolutionary because the acidity shortens the gluten strands in the wheat, resulting in muffins that are very light and soft.

Substitute: Most plant milk will work well here, but we've found that oat milk works best since the natural sugars help baked foods brown more evenly. Although apple cider vinegar can be substituted, we have also found that lemon juice produces the greatest results.

Brown sugar 

Compared to white sugar, brown sugar contains more moisture and a deeper taste. If you reside in the United States, try to get organic brown sugar to make sure it is vegan.
