There is no question that they are simple and quick to make, regardless of what you want to call them under! If you throw them on the grill, you can be certain that the chicken will have a flawlessly browned outside while yet retaining its juicy inside. When ordering Hawaiian chicken, it is customary to request tomato sauce. If you want these chicken kebabs to have an even more delicious taste, you may replace the tomato sauce with your preferred barbecue sauce.

In this recipe, you are free to try any of them. Bamboo skewers should be soaked in water for half an hour before being used on the grill to prevent wood from catching fire. For even better results, you may soak them overnight. Skewers that have been thoroughly soaked will remain on the grill for a longer period of time before they catch fire.

Metal skewers, on the other hand, need no prior preparation. We usually grease them with a little application of oil.

How to Make Chicken Kebabs

These skewers are extremely simple to make!Use the meatiest cut of bacon. We use short cut bacon, but you may use whatever you have on hand. Slice bacon about 2 1/2 inches long and 1 inch broad, or just enough to cover each piece of chicken on the skewers. If this sort of bacon is unavailable, you may substitute the bacon you regularly use for frying and grilling.

For this dish, we prefer fresh pineapple, although canned pineapple may be used if fresh is not available. Slice any remaining pineapple into discs and serve with the kebabs on the side!

INGREDIENTS

SAUCE:

  • 1/2 cup of barbecue sauce.
  • 1/2 cup soy sauce.
  • 1/4 cup pineapple juice.
  • 1 tablespoon brown sugar.
  • 1 tablespoon of rice wine vinegar.
  • 1 1/2 tablespoons minced garlic.
  • 1 tablespoon of olive oil.
  • 1 teaspoon of sesame oil.

SKEWERS:

1 pound (500 g) chicken breasts, cut into 1-inch cubes.
Cut 16 bacon rashers in half lengthwise (2 1/2 inch x 1-inch) after trimming off superfluous fat.
3 cups fresh, diced pineapple
1 big red pepper (capsicum) chopped into 1 inch pieces.
1 big green pepper (capsicum) chopped into 1 inch pieces.
1 big red onion, cut into 1-inch pieces.

Instructions:

  • Add salt and cracked pepper to taste.
  • Combine the barbecue sauce, soy sauce, pineapple juice, rice vinegar, garlic, and sesame oil in a large jug or dish.
  • Preheat a grill pan (or grill plates on the barbecue) to medium-high heat.
  • Thread the red onion, red pepper (capsicum) piece, pineapple, green pepper, bacon, and chicken onto skewers and wrap the bacon around the chicken as shown above.
  • Repeat until all of the chicken is used. Coat the skewers equally with half of the marinade (keep the other half for basting).
  • Brush the grill pan or grates with olive oil. Grill the skewers for 5 minutes, then brush with 1/4 cup of the leftover marinade.
  • Turn skewers over and coat with the remaining 1/4 cup marinade.
  • Grill for another 4 minutes, or until the chicken is cooked thoroughly and to your preference. Serve immediately.
